Best-before date & counter
display What does the best-before date mean for the cheeses on my counter?
The best-before date is not an expiry date; it indicates the minimum (not the maximum) period for which a cheese can be kept. Cheese, in particular, is a product that often continues to develop its flavour beyond the best-before date.
Once a piece of cheese is removed from its packaging and placed on the counter, responsibility for the best-before date rests with the retailer. As a
general rule, staff at the cheese counter should visually inspect and taste the product.

Mould!
Help! – What should I do?
It is important to distinguish between desirable mould and unwanted mould. For example, white noble mould is desirable on soft cheese. Even if it ‘grows into’ the cheese slightly after cutting, this is not a problem. However, if other moulds appear during storage, they should be treated appropriately or removed.
Our ‘Cheese Knowledge for Beginners’ seminar and the ‘Cheese II’ webinar cover the topic of mould in detail. If you’d like to learn more about this and other topics, be sure to sign up. You’ll find a
quick guide in our Cheese Glossary (Cheese Encyclopaedia) under the entries ‘Schimmel’ (Mould) and ‘Fremdschimmel’ (Unwanted Mould), with useful information on caring for the cheeses on your counter.

Sales strategies
Sales at my cheese counter are steadily declining. What can I do about it?
Your dedicated sales representative is happy to visit your location, review your cheese counter, and share actionable tips to drive sales. We also recommend participating in our seminars or webinars. Anyone who successfully completes all four webinars will be rewarded with a free online tasting event focusing on cheese and beer.
Online

To streamline your social media marketing, we recommend the biobook platform. We at ÖMA regularly post shareable content there.

In addition to the cheese counter, you can also present a Cabrio counter
where customers can help themselves to pre-packaged pieces of cheese. Here, too, it makes sense to feature changing themes – such as, for example, a cheese, beer & wine combination featuring our ÖMA Zwölfender, beer from Neumarkter Lammsbräu and wine from Riegel Bioweine.
