Cheese categories
Cheeses are classified into six groups based on the moisture content of the fat-free cheese matrix (often abbreviated as Wff). The constituents of cheese—depending on its raw material, milk—are fat, protein, carbohydrates, minerals, vitamins and water. All these components together are referred to as the cheese curd – if the fat is removed from the cheese curd, the result is the fat-free cheese curd.
The cheese groups are categorised as cream cheese, soft cheese, semi-firm sliced cheese, sliced cheese, hard cheese and sour milk cheese.
